I kept putting off buying an ice cream maker because I thought making my own would be too hard or to time consuming. Boy was I wrong. This little machine is a ice cream lover's dream! Home made to Your liking in 25 minutes ! It's so easy to operate. You don't have alot of ingredients to mix. It's simple simple simple !Plus it makes just enough for a family of four or five, with still some left over for me to enjoy the next day.. yum yum This is one where it's a no brainer, if you're thinking of buying one and you're not sure... stop thinking and buy this one ! You will LOVE IT !

5excellent with soy milk gelato recipe!

Upon further consideration and more frequent use of the machine I have concluded that the machine is in fact *noisy* and IMO this an acceptable "flaw" considering the overall quality and performance.

I just made my first batch of blackberry gelato using a soy milk custard base and it came out simply fabulous! Yesterday I put the Cuisinart container in the freezer so it could set for 24 hours. This morning, I made the soy custard base and a blackberry fruit compote about five hours ahead of time so both would have time to cool properly. Then I turned it on and added the custard base to the machine. In about 25 mi nutes the mixture had the consistency of soft serve ice cream and it was time to add the fruit compote. I added about half a cup or so and let it mix for about one minute, then transferred the contents of the Cuisinart freezer bowl to a dish that I had pre-chilled in the freezer. After about three hours, the batch was hard frozen like premium ice cream. Delicious!

Notes:

As this is my first batch, I added less than I thought I may need of the blackberry compote; ice cream reportedly gets less sweet as it sets in the freezer and I can always add more compote to the individual serving bowls, mixing it in or using it as a topping to adjust the sweetness if needed.

Consumer Reports ranks the smaller version (Cuisinart Ice 21) higher in their ratings because it tested as making less noise and produced less ice crystals; I found no evidence of ice crystals in the batch of gelato I made and personally I thought the noise level of this unit was more than acceptable.

(Blackberry) Soy Gelato Recipe:

* 1 cup sugar
* 4 egg yolks
* 1 teaspoon cornstarch
* 1.5 cups SILK original soy milk + .5 cup of Silk Soy creamer
* 1 teaspoon vanilla extract

Directions:

1. Put the eggs yolks, sugar, and corn starch into a bowl; whisk the mixture together.
2. Heat the soy milk to 180*F; slowly drizzle the hot soy milk into the mixture while continuing to whisk quickly so the eggs to not cook too quickly and curdle.
3. Add the vanilla extract.
4. Transfer to a bowl and let the mixture cool in the refrigerator for 5 hours.
5. Pour the mixture into an ice cream maker and follow the instructions of the machine.

Fruit Compote: I combined 3 cups frozen Blackberries plus 1/8th cup of sugar* and allowed to sit in a medium heavy bottomed saucepan over low heat until the moisture had all but evaporated. Transfer to a small bowl and allow to cool for five ho urs. Should work with most fruit or berries. *Sugar to taste depending upon your fruit.

Pleased with this purchase and highly recommended.

5Great Product

This product works exactly as advertised! Saying goodbye to our old ice cream maker. The recipe book that comes with it is very good. We have tried a couple of the recipes and they have turned out excellent.
